Comforting, healthy, and filling. This soup is perfect for a delicious lunch, dinner, or even a small bowl as a snack in the springtime. It takes just about 30 minutes to whip up and you’ll have eight servings to enjoy the rest of the week – or freeze the leftovers and have another time.

You’ll need a cutting board, a knife, a vegetable peeler, a soup pot, a blender, and a few simple ingredients. Prepare your fresh fruit by washing, drying, and slicing into bite-sized pieces. Strawberries, kiwi, mango, berries, and ripe pears make a great filling for these rolls.

Wet your rice paper wraps (follow the directions on the packaging), lay flat onto a cutting board, place fruit into the lower third of the paper, then fold the wrap edges over as if you were assembling a small burrito.
